Ingredients

  • 1 bunch whole carrots peeled
  • ¼ cup milk or milk substitute
  • 1 sachet Simply Desserts Frosting Mix (Vanilla Flavor)
  • ¼ cup olive oil
  • Salt pepper, and thyme to taste

Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together the milk, Simply Desserts Vanilla Frosting, olive oil, and seasonings until well combined.
    1/4 cup milk, 1 sachet Simply Desserts Frosting Mix, 1/4 cup olive oil, Salt
  • Toss the peeled carrots in the mixture, making sure they’re evenly coated. Spread them out on the prepared baking sheet.
    1 bunch whole carrots
  • Roast for 15–20 minutes or until the carrots are soft and golden.
  • Serve warm as-is, or elevate the dish by plating on a bed of ricotta and topping with fresh herbs.
