Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, whisk together the milk, Simply Desserts Vanilla Frosting, olive oil, and seasonings until well combined.

Toss the peeled carrots in the mixture, making sure they’re evenly coated. Spread them out on the prepared baking sheet.
1 bunch whole carrots
Roast for 15–20 minutes or until the carrots are soft and golden.
Serve warm as-is, or elevate the dish by plating on a bed of ricotta and topping with fresh herbs.
