    This southern classic is super easy and super tasty. However, this recipe has a slight twist! It's super sweet, but it also has no added sugar. This sugar-free cupcake recipe can be enjoyed by everyone, especially those who follow a diabetic-friendly diet. Who doesn't love that? It's okay, go bananas for this banana pudding cupcake recipe.

    Ingredients

    Cupcakes

    • 1 packet Zen Sweet Life vanilla bean cake mix
    • 3 eggs
    • cup oil
    • cup water
    • 4 drops One on One Flavors vanilla cupcake
    • 4 drops One on One Flavors banana
    • ½ cup sugar-free chocolate chips
    • Nana's Cookie Company chocolate chip cookies
    • optional: freeze dried bananas

    Filling

    Whipped Mascarpone Frosting

    • 1 8oz Belgioso Cheese mascarpone cheese
    • ½ cup powdered sugar replacement
    • ½ cup heavy whipping cream
    • 6 drops One on One Flavors vanilla cupcake

    Instructions

    Cupcake

    • Preheat oven to 350°F and mix cupcakes according to package directions adding extracts. Stir in chocolate chips.
    • Divide batter among 12 cupcake liners and bake 18-20 minutes or until done.
    • Allow to cool and form a well in cupcakes by using the large side of a frosting tip.
    • Place the tip in the center of the cupcake, press and twist to remove some of the cake saving that portion to add back after filling.

    Filling

    • Whisk mix and milk together until thickened and smooth.
    • Place in plastic bag cutting off the tip and pipe into cupcakes (you will have leftover to enjoy). Top with reserved cake.

    Whipped Mascarpone Frosting

    • Whip mascarpone and powdered sweetener together until light and fluffy. In separate bowl whip cream to stiff peaks. 
    • Fold whipped cream into to mascarpone mixture adding in about 1/4 at a time. Top cupcakes with frosting however you like.
    • Crumble up some Nanas cookies and sprinkle over the top to add the element of the vanilla wafers but at the next level!
