    Ingredients

    Cookies

    • 1 package Zen Sweet Life Snickerdoodle cookie mix
    • 4 tbsp butter melted
    • 1 egg
    • 1 tsp red velvet baking emulsion

    Filling

    • 1 sachet Simply Desserts Vanilla Pudding
    • cups heavy whipping cream
    • cup One on One Flavors mini marshmallow
    • 4 drops One on One Flavors vanilla cupcakes

    Coating

    • ½ cup sugar-free chocolate chips
    • 2 tsp coconut oil

    Instructions

    • Preheat oven to 350° F. Line baking sheet with parchment paper.
    • Add cookie mix to bowl along with melted butter, egg and baking emulsion. Mix well using a hand or stand mixer.
    • Scoop onto baking sheet with a small cookie scoop.
    • Bake 9 minutes and cool completely.
    • Add heavy cream to a bowl along with flavoring. Sprinkle pudding mix in and whip until thick and creamy.
    • Add marshmallows and mix to combine.
    • Sandwich filling in between two cookies. I used my medium cookie scoop to do this and it portioned out perfectly.
    • For the topping add chocolate chips and coconut oil to bowl and microwave in 15 second intervals until you can stir it smooth.
    • Pour over cookies and top with sprinkles.
