    Ingredients

    Cookies:

    • 1 ⅔ cups of all-purpose flour
    • 2 tbsp of Simply Dessert Protein Vanilla Pudding
    • 1 tbsp of lemon zest
    • 1 pack of Simply Dessert Sugar-Free Raspberry Jel
    • 1 tsp of baking soda
    • 1 tsp of baking powder
    • ½ cup of brown granulated monk fruit
    • ½ cup of granulated monk fruit
    • 1 tbsp of vanilla extract
    • ¾ cup of softened ghee or butter
    • 2 tbsp of milk
    • 1 whole egg

    Coating

    • cup of brown granulated monk fruit

    Instructions

    • Preheat your oven to 350°F (175°C).
    • In a large bowl, combine all the dry (except for raspberry mix) ingredients for the cookies.
    • Mix in the ghee, eggs, vanilla extract, and milk until smooth.
    • Sprinkle the raspberry jel dessert and knead the dough dough to create the swirls.
    • Pinch the dough, roll in your hands in a circle and coat them in brown granulated monk fruit.
    • Shape the dough into large cookies, place them on a parchment-lined baking sheet.
    • Bake for 13-14 minutes until the edges turn slightly golden and cookies appear chewy inside.
