Who doesn't love pumpkin cheese in the form of a cupcake. These cupcakes are so delicious, you'll be wanting them for dessert and breakfast!

    Ingredients

    Cupcake

    • 1 packet Lakanto Pumpkin Spice Mix

    Pumpkin Cheesecake Cream Filling

    • 1 packet Simply Desserts Vanilla Pudding
    • 1 cup heavy cream
    • ½ cup unsweetened vanilla almond milk
    • ½ cup pumpkin puree
    • 15 drops Oooflavors Cheesecake frosting

    Instructions

    • Make Pumpkin Spice Mix from Lakanto according to package instructions.
    • To make the filling, mix the Simply Desserts Instant Vanilla Pudding Mix, cream and almond milk until thickened.
    • Once fully incorporated, add in the pumpkin and Oooflavors cheesecake flavoring.
    • Let set in the fridge to thicken.
    • Once fully thickened, frost the top of the Pumpkin Spice Cake with the Cheesecake Cream Filling.
    • Drizzle with caramel & pumpkin Choc Zero syrups.
    • Crumble up some Pumpkin Spice Lolli's Cookie Clusters on top then sprinkle a little bit of pumpkin pie spice.
