Preheat the oven to 325°F (163°C). Line a muffin tin with paper liners.
Mix all muffin ingredients in a large bowl until combined. Add a splash of milk if the batter is too thick. Then fold in the blueberries.
1 cup almond flour, 1 sachet Simply Desserts Sugar Free Lemon Pudding, 1/2 cup sugar or monk fruit sugar, 1 tsp baking powder, 2 eggs, Juice from 1/2 a lemon, 3 tbsp melted butter, Lemon zest, Vanilla extract, Splash of milk or oat milk as needed, Blueberries
Scoop the batter into the muffin tin and bake for 30 minutes, or until a toothpick comes out clean. Remove from oven and let cool.
While the muffins bake, prepare the icing: mix Simply Desserts Sugar Free Vanilla Frosting with lemon juice, lemon zest, and a bit of milk. Add more milk for a thinner consistency.

Once muffins are cool, spread icing on top, sprinkle with more lemon zest, and top with fresh blueberries to serve.
