Grease a 9×5 loaf pan or line it with parchment paper and Preheat oven to 325 F.
Make Simply Desserts Lemon Pudding according to package instructions using milk and reserve 2/3 for batter
1 Sachet Simply Desserts Lemon Pudding, 2 Cups whole milk plus more for icing
Stir all ingredients aside from frosting mix together until smooth and pour into the pan.
2 Cups almond flour, 1/3 Cups sugar alternative, 1 Tbsp baking powder, 1/2 Tsp salt, 1/4 Cup lemon juice, 3 eggs
Bake for 50 minutes. After removing from the oven, let cool completely in pan before turning out
Make the lemon icing glaze by mixing milk, lemon zest, and frosting mix together until desired consistency is reached
2 Cups whole milk plus more for icing, Lemon zest, 1 Sachet Simply Desserts Vanilla Frosting
Pipe on top of the cooled loaf and slice to serve
