Start by preheating your oven to 350° Fahrenheit, and grease 2 6” cake pans well. I use lard to grease my pans.
Make cake batter according to the package directions, using 3 eggs, 1/2 cup of water, and 1/3 cup of oil, but instead of baking in one pan, divide between 2 6” pans. I baked my cakes for approximately 22 minutes, but remember that oven temps vary. Allow cakes to cool.
While cakes are cooling make your creamy, chocolate pudding layer. Simply add one package of Simply Desserts Instant Chocolate Pudding mix, 1 cup of heavy cream, and ½ cup of unsweetened almond milk to a bowl and mix on medium speed for approximately 2 minutes.
Now it's time to build your cake. You'll want to have everything; pudding, frosting, and cherries divided into 2 equal portions before starting. It just makes it easier.
Start with one of your cake layered, add ½ of the pudding, and smooth. Next, make your chocolate by heating ½ of the frosting in the microwave for approximately 10 seconds. It heats quick! You want the frosting to be thick but pourable. Pour on the ganache and spread evenly, and allow to run down the sides if desired. Next up is your cherry layer! Repeat...and ENJOY!
