Turn oven to 300° F. Coat an oven safe dish (8x8 Pyrex).
In a bowl, mix all the crust ingredients until well incorporated and place in dish.
1 1/2 cup blanched almond flour, 1/4 cup confectioners Swerve, 1 tsp vanilla extract, 1/4 cup melted butter, 1 egg, Pinch of salt
With a knife, poke some holes and bake for 12 to13 minutes, until lightly golden. Once finished, remove and let cool.
Add Simply Desserts Instant Banana Pudding Mix, milk, heavy cream, and vanilla and mix until creamy and soft.
1 box Simply Desserts Banana Pudding, 2/3 cup heavy whipping cream, 16oz oz cream cheese, 1 cup confectioners Swerve, 1/2 cup almond milk, 1 tsp vanilla extract
Add on top of your baked crust. Freeze for two hours.
In a final medium bowl, add meringue ingredients. Use a hand mixer to mix the ingredients until soft peaks form. It should be silky.
5 large egg whites, 1/4 tsp cream tartar, 1 cup confectioners Swerve, 1/2 tsp lemon zest
Blow torch to a nice golden brown. Chill for 30 minutes.
Top with your favorite crushed cookies, serve and enjoy!
