    Ingredients

    • ½ package Simply Desserts Sugar Free Banana Pudding
    • 2 ripe bananas
    • ½ cup pumpkin purée
    • 2 eggs
    • 1 cup milk or milk substitute
    • 1 ⅓ cups self-rising flour
    • 1 teaspoon ground cinnamon
    • 1 teaspoon extra virgin olive oil or butter

    Instructions

    Slice the bananas

    • Peel and cut bananas into 0.8 cm slices.
      2 ripe bananas

    Make the base batter

    • In a blender, combine the eggs, milk, and pumpkin purée. Blend on low speed (1–2) for 30 seconds.

    Add dry ingredients

    • To the mixture, add the self-rising flour, cinnamon, and Simply Desserts Banana Pudding mix. Blend again on a higher speed (8–9) for 40 seconds.
      1 1/3 cups self-rising flour, 1 teaspoon ground cinnamon, 1/2 package Simply Desserts Sugar Free Banana Pudding

    Coat banana slices

    • Gently dip the banana slices into the batter until fully coated.

    Prepare your pan:

    • Lightly brush a non-stick pan with oil or butter and heat it over medium heat.
      1 teaspoon extra virgin olive oil or butter

    Cook

    • Place the coated banana slices in the pan and cook for about 3 minutes per side, or until golden brown.
    • Plate with fresh banana slices or berries, and drizzle with maple syrup for a final touch.
