Ingredients

  • 1 cup gluten-free baking powder
  • ½ cup vegan cocoa
  • 2 tbsp Simply Desserts Chocolate Pudding
  • ½ cup unsweetened vanilla greek yogurt
  • ½ cup cashew milk
  • 2 egg whites or 1 flax egg
  • 2 tsp liquid stevia
  • 1 tsp vanilla
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup pistachios chopped

Instructions

  • Preheat the oven to 350°F, line a loaf pan.
  • Whisk together the dry ingredients in a medium bowl.
  • In a separate bowl, whisk together the wet ingredients, besides milk.
  • Stir in the dry mixture to the wet, pouring in ¼ cup of milk at a time.
  • Even spread batter into pan, sprinkle chopped pistachios on top.
  • Bake for 50 minutes, or until the top feels firm to the touch. enjoy!
