  • Add the dates and pecans to a food processor and pulse until the mixture becomes sticky yet moldable.
    10-12 pitted Medjool dates, ½ cup pecans
  • Roll the date-pecan mixture into small balls and place them on a platter.
  • Use the back of a wooden spoon to create a small indentation in the center of each toffee ball.
  • Prepare the Simply Desserts Sugar-Free White Chocolate Pudding according to the package instructions using your preferred milk.
    1 sachet Simply Desserts White Chocolate Pudding, 2 cups milk or milk alternative
  • Pipe the pudding into the center of each toffee ball.
  • Top with a whole pecan and enjoy!
