Ingredients

Funfetti Banana Loaf

  • 1¼ cup all purpose flour
  • 1¼ cup almond flour
  • 1 cup spelt flour (or more all purpose / whole wheat)
  • ½ cup coconut sugar (or another granulated sugar)
  • 2 scoops Unicorn Suprise Foods vanilla cake
  • 1½ tbsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • 2 ripe bananas
  • ½ cup applesauce
  • ½ cup almond milk
  • ¼ cup vegan butter melted
  • splash of vanilla extract

Strawberry Cheesecake Frosting

  • ½ cup vegan cream cheese or cream cheese of choice
  • 2 tbsp vegan butter or coconut oil melted
  • 2 tbsp maple syrup
  • 2 tsp Unicorn Super Foods beauty blend
  • 1 sachet Simply Desserts Strawberry Pudding
  • pinch of salt

Instructions

  • Preheat oven to 350°F.
  • Mix together the dry ingredients.
  • In a septerate bowl, mix together the wet ingredients.
  • Combine dry and wet ingredients together.
  • Transfer to lined loaf pan and bake at 350°F for 50 mins!
