Tropical Citrus Salad Dressing

Ingredients

  • 1 tsp Simply Desserts Peach Jel just enough to lightly thicken, not gel
  • ½ cup Ceres Fruit Juice (Peach or Passion Fruit)
  • 1 tbsp apple cider vinegar or lime juice
  • 2 tbsp olive oil or avocado oil
  • 1 tbsp finely diced cucumber
  • 1 tbsp shredded carrots
  • 1 tsp chopped red bell pepper
  • 1 tbsp chopped fresh herbs mint, parsley, or cilantro
  • Salt & pepper to taste

Instructions

  • In a small pot, gently warm the Ceres juice over low heat. Sprinkle in the Peach Jel, whisking constantly to dissolve. (Do not boil—just warm enough to activate.)
    1 tsp Simply Desserts Peach Jel, 1/2 cup Ceres Fruit Juice
  • Remove from heat and stir in vinegar or lime juice. Let cool slightly.
    1 tbsp apple cider vinegar or lime juice
  • Whisk in olive oil, then stir in finely chopped veggies and herbs.
    2 tbsp olive oil or avocado oil, 1 tbsp finely diced cucumber, 1 tbsp shredded carrots, 1 tsp chopped red bell pepper, 1 tbsp chopped fresh herbs
  • Season with salt and pepper. Chill for 10–15 minutes to let flavors infuse.
    Salt & pepper to taste
  • Shake or whisk before serving over fresh salad greens or grilled proteins.
