Cran-Raspberry Gelatin Pops

Ingredients

cup
cold water
▢

cups
cran-raspberry juice
▢

tablespoons granulated sugar
optional, depending on the sweetness of your juice
▢

cup
fresh raspberries

Popsicle molds and sticks
Instructions
Pour the cold water into a small bowl and whisk in the Simply Desserts Gelatin Alternative until completely dissolved.
Pour the cran-raspberry juice into a small saucepan and stir in the sugar, if using. Heat over medium heat until hot but do not let it boil.
Remove the saucepan from the heat and whisk in the dissolved gelatin mixture until fully incorporated.
Let the mixture cool for about 10-15 minutes, stirring occasionally.
Divide the fresh raspberries evenly among 8 popsicle molds.
Carefully pour the warm gelatin mixture into each mold, filling almost to the top.
Refrigerate for 4-6 hours, or until completely set.
To unmold, run the outside of each mold under warm water for a few seconds and gently pull the gelatin pop free.
