In a large bowl beat cream cheese until smooth, add egg, vanilla extract, sweetener, salt and Lime Jel mix. Beat until smooth.
8 oz softened cream cheese, 1 egg, 1/2 tsp vanilla extract, 1/2 cup sweetener, Pinch salt, 1 tbsp Simply Desserts Lime Jel
Pour into baking dishes and bake for 10-15 mins or until the center jiggles only a little and the edges start to brown.
While the mini cheesecakes are cooking take around 1/2 cup (amount is your preference) of unsweetened coconut flakes, and sprinkle out flat on foil and pop in your toaster oven (or reg oven) and bake for 5ish mins. Times may vary depending on your oven. Set aside.
Once cheesecakes are done let cool for 20 mins then cover and chill!
Once chilled, add sugar free whip on top, sprinkle toasted coconut and add some lime zest!
