In a stand mixer, start by whipping 1 Cup of the coconut cream until light and fluffy. Add in the Keylime pie flavor drops, powdered sugar, lime zest and juice. Whisk again until combined.
Heat up the remaining ¼ cup of coconut cream and dissolve the packet of Simply Desserts Lime Jel into it.
Pour this into the other ingredients while the mixer is whisking on low. Bring the mixer up to speed and whip for 1 minute.
Use a rubber spatula to fold in the desiccated coconut.
Line a square brownie dish with plastic wrap and press the lime coconut mixture evenly into the bottom. Place in the freezer to set.
