Crumble the cooled red velvet cake into fine crumbs using a large bowl.

In a separate bowl, whisk together the milk, Simply Desserts White Chocolate Pudding Mix, and cream cheese using a hand or stand mixer until smooth and creamy.
1 sachet Simply Desserts White Chocolate Pudding, 2 cups milk of choice, 225 g 8 oz cream cheese, softened (dairy or dairy-free)
Add the white chocolate pudding mixture to the cake crumbs and gently fold until fully combined.
Roll the mixture into 1-inch balls and place onto a parchment-lined tray.
Freeze for 1–2 hours to firm up the cake balls.
Dip each cake ball into the melted white chocolate and return to the tray.
2 cups sugar-free white chocolate chips
Add sprinkles while the chocolate is still wet.
Optional: festive sprinkles for topping
Freeze again for 5–10 minutes until the chocolate has set.
