    Ingredients

    • 15 oz pumpkin
    • 2 eggs
    • cup maple syrup
    • 2 cups quick cooking oats
    • ½ tsp vanilla extract
    • 1 tsp baking soda
    • 1 tsp pumpkin pie spice
    • 1 Sachet Simply Desserts Frosting (vanilla)
    • 1 8 oz pack of cream cheese softened
    • ½ cup dairy or soy milk
    • Orange and green food coloring
    • Chocolate chips to decorate

    Instructions

    • Preheat the oven to 350°F and fill a muffin pan with paper liners.
    • Add all the ingredients to a food processor and blend on high until fully combined and oats are broken down. Transfer the batter equally to the muffin pan.
      15 oz pumpkin, 2 eggs, 1/3 cup maple syrup, 2 cups quick cooking oats, 1/2 tsp vanilla extract, 1 tsp baking soda, 1 tsp pumpkin pie spice
    • Bake for 20-25 minutes. Remove from oven and let cool completely.
    • Add the milk, cream cheese, and Simply Desserts Vanilla Frosting mix to a stand mixer. Whip on high until fully combined and fluffy.
      1 Sachet Simply Desserts Frosting, 1/2 cup dairy or soy milk, 1 8 oz pack of cream cheese softened
    • Set a little bit of plain frosting aside and mix it with green food coloring. Then add in orange food coloring to the rest and whip again. Transfer each color to a piping bag,

    • Pipe pumpkins on your cooled muffins starting with making half circles on the outer sides and working your way in. Pipe green leaves and vines to the top of the pumpkin and finish with a chocolate chip stem.
