Preheat oven to 350°F and grease a baking tin.
Roll out the dough on a floured surface into a large rectangle.
Mix together butter and pistachio pudding mix until smooth and spread a thin layer onto the dough.
Roll the dough up and cut into 1 inch discs.
Place on your baking pan swirl side up leaving a little bit of room in between each roll to allow for growth and bake for 25 to 30 minutes or until golden brown.
While the rolls are baking, whisk together the vanilla pudding mix and heavy cream until a frosting-like consistency forms.
Spread the pudding frosting onto the baked and slightly cooled rolls, and top with crumbled pistachios before digging in!
