Make the crust by first blending the granola in a food processor until it reaches a crumble consistency.
2 cups of your favorite granola
Add to a bowl and mix in the melted chocolate and coconut oil.
1/3 cup melted paleo chocolate , 1 tbsp melted coconut oil
Press into an 8x8 baking pan lined with parchment paper and stick in the fridge.
Blend together your soaked cashews and nut milk in a food processor. Blend until smooth then add the rest of your ingredients and continue blending.
1 cup soaked raw cashews, 1/2 packet Simply Desserts Raspberry Jel, 2 tbsp powdered monk fruit, 1/3 cup raspberries, 1/4 cup nut milk, 1/4 tsp Himalayan salt, 2/3 cup dairy free cream cheese from @kitehillfoods
Once everything is well incorporated, pour over the crust layer and then stick back in the fridge to set.
Once set, cut into 16 pieces and enjoy! For added yumminess, top with fresh fig slices and freeze dried raspberries.
