Make Simply Desserts Vanilla Pudding according to box instructions using milk of choice
Add chia seeds and blue spirulina to pudding and mix, then fold in blueberries.
Cover and refrigerate for 2 hours or overnight until set
Spoon melted white chocolate mixed with a dash of blue spirulina powder into a silicon mermaid tail mold. Freeze until hardened.
Spoon set chia pudding into serving cups and top with coconut shreds, chocolate mermaid tails, and blue sprinkles.
Serve immediately and enjoy. Keep refrigerated in an air tight container for up to 3 days.
