- Make Simply Desserts Vanilla Pudding according to box instructions using milk of choice 
- Add chia seeds and blue spirulina to pudding and mix, then fold in blueberries. 
- Cover and refrigerate for 2 hours or overnight until set 
- Spoon melted white chocolate mixed with a dash of blue spirulina powder into a silicon mermaid tail mold. Freeze until hardened. 
- Spoon set chia pudding into serving cups and top with coconut shreds, chocolate mermaid tails, and blue sprinkles. 
- Serve immediately and enjoy. Keep refrigerated in an air tight container for up to 3 days.
