Line a small (4 x 6-inch) rectangular dish with parchment paper (or aluminum foil) and set a side. You can also use a plastic reusable sandwich container instead which will not need to be lined.
Place the sugar-free white chocolate chips, butter and heavy cream in a medium microwave-safe bowl and heat in 15-second intervals, stirring well after each interval, until smooth.
1 cup (4ounces) Sugar-free white melting wafers, 3 tbsp Butter, 2 tbsp Heavy cream
Add the strawberry pudding mix, strawberry extract and salt to the bowl. Quickly stir to combine, then pour into the prepared baking dish (do not OVER-STIR as the ingredients will separate).
1.7 oz Simply Desserts Strawberry Pudding, Optional - freeze dried strawberries and strawberry extract
Leave at room temperature until set. Slice and serve.
