Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
In a stand mixer, cream the softened butter and the Simply Desserts Vanilla Pudding mix until combined. Scrape down the sides, then add a splash of milk if the mixture appears too crumbly. Gradually mix in the flour until a dough forms. Add optional sprinkles for a festive touch and mix until evenly distributed.
1 sachet Simply Desserts Vanilla Pudding, 1 cup all-purpose flour, Splash of milk, Optional: Festive sprinkles, 1 stick
Shape the dough into a disc, wrap it in plastic wrap, and chill in the fridge for 20 minutes.
In a medium saucepan, combine the Simply Desserts Sugar Free Raspberry Jel, lemon juice, 1/2 cup water, 1/3 cup water, and frozen raspberries. Simmer over low heat, stirring occasionally, until the mixture thickens slightly. Set aside to cool.
1 sachet Simply Desserts Raspberry Jel, Juice of 1/2 lemon, 1/2 cup water + 1/3 cup water, 1 1/2 cups frozen raspberries
Roll the chilled dough into 1-inch balls and place them on the prepared baking sheet. Use the back of a teaspoon or your thumb to press down in the center of each ball, creating a well.
Fill each well with the prepared raspberry jam. Bake in the preheated oven for 12–14 minutes, or until the edges turn lightly golden.
Let the cookies cool on a wire rack.
For an extra festive touch, drizzle green icing over the cookies and dust with powdered sugar.
