Add all mochi ingredients to a saucepan over medium heat and mix until a thick paste forms.
Turn off the heat and continue mixing and beating the mochi until evenly translucent.
Transfer to a dish coated with corn starch and press into an even layer to cool.
Preheat oven to 350°F and line a baking sheet with parchment paper.
Add crumbled Goodie Girl cookies and a small ball of mochi in between 2 pieces of cookie dough. Seal the edges, then roll into a ball and place on the baking sheet.
Bake for 15 to 20 minutes or until the edges are slightly golden.
Remove from oven and let cool. Top with a sprinkle of sea salt and enjoy!
