2pkgPhiladelphia cream cheese8 oz each, softened
1tspvanilla extract
1premade graham cracker crust4 oz mini or 9-inch
Instructions
Bring ¾ cup water to a boil on the stove.
In a small bowl, stir the sachet of gelatin alternative into ¼ cup cool water. Let sit 1 minute to soften.
Add the softened gelatin and ½ cup sugar to the boiling water. Stir 1–2 minutes until completely dissolved. Remove from heat and let cool slightly.
In a stand mixer or large bowl, beat the softened cream cheese and vanilla until smooth.
With the mixer on low, slowly pour in the gelatin mixture and beat until fully combined and smooth.
Refrigerate the filling for about 45 minutes, stirring every 15 minutes, until slightly thickened.
Pour into the graham cracker crust and smooth the top.
Refrigerate at least 3–4 hours, or until fully set, before slicing.
Notes
The 45-minute pre-chill (step 6) is optional — it helps the filling hold its shape if you want a taller, fluffier cheesecake. If you'd rather skip it, just pour directly into the crust after step 5 and chill the whole pie until set.
