In a small saucepan, simmer diced apples with maple syrup and a splash of water until soft. Set aside to cool.

In a mixer, cream together butter and brown sugar alternative. Add the egg, vanilla extract, and sour cream; mix until smooth.

In a separate bowl, combine almond flour, Simply Desserts Vanilla Pudding mix, cinnamon, baking soda, and salt.
3 cups almond flour, ¼ cup Simply Desserts Vanilla Pudding, Dash of cinnamon, ½ tsp baking soda, ½ tsp salt
Add the dry mixture to the wet and stir until just combined.
Scoop dough into 2 Tbsp-sized balls. Roll in the sugar alternative, then place on a parchment-lined baking sheet.
¼ cup sugar-free white sugar alternative
Use your thumb or a spoon to create a well in the center of each cookie and spoon in the cooled apple mixture.
Bake at 350 °F (175 °C) for 12–15 minutes or until golden.
Cool on a wire rack, drizzle with sugar-free caramel sauce, and top with whipped cream before serving.
