    Ingredients

    • 4 tbsp butter softened
    • 1 cup sugar-free brown sugar alternative
    • ¼ cup sugar-free white sugar alternative
    • 3 cups almond flour
    • ¼ cup Simply Desserts Vanilla Pudding
    • 1 egg
    • Dash of cinnamon
    • ½ tsp baking soda
    • ½ tsp salt
    • 1 tsp vanilla extract
    • ¼ cup sour cream
    • 1 apple diced
    • 2 Tbsp sugar-free maple syrup
    • Sugar-free caramel sauce for drizzle
    • Sugar-free whipped cream for topping

    Instructions

    • In a small saucepan, simmer diced apples with maple syrup and a splash of water until soft. Set aside to cool.

    • In a mixer, cream together butter and brown sugar alternative. Add the egg, vanilla extract, and sour cream; mix until smooth.

    • In a separate bowl, combine almond flour, Simply Desserts Vanilla Pudding mix, cinnamon, baking soda, and salt.
      3 cups almond flour, ¼ cup Simply Desserts Vanilla Pudding, Dash of cinnamon, ½ tsp baking soda, ½ tsp salt
    • Add the dry mixture to the wet and stir until just combined.
    • Scoop dough into 2 Tbsp-sized balls. Roll in the sugar alternative, then place on a parchment-lined baking sheet.

    • Use your thumb or a spoon to create a well in the center of each cookie and spoon in the cooled apple mixture.
    • Bake at 350 °F (175 °C) for 12–15 minutes or until golden.
    • Cool on a wire rack, drizzle with sugar-free caramel sauce, and top with whipped cream before serving.
