Make the pistachio pudding according to package directions using milk of choice.
1 Sachet Simply Desserts Pistachio Pudding mix, 2 Cups whole milk or other milk of choice
Add the butter to a frying pan over medium heat. Once melted, add in the kataifi and mix around the pan until golden brown.
1 Cup kataifi, 2 Tbsp butter
Transfer the cooked kataifi to the prepared pistachio pudding and fold together until completely combined.
Melt the chocolate and pour half into a silicone chocolate bar mold, just enough to coat the bottom and sides of each bar. Place in freezer to set for at least 5 minutes.
Spoon in the pistachio filling into each chocolate bar mold and spread out evenly.
Pour the remaining melted chocolate on top and spread out to fill all remaining areas in the chocolate bar molds. Tap on the counter to bring any air bubbles to the surface before placing in the freezer to set for at least 20 minutes.
9 Oz sugar-free milk chocolate
Remove from molds and enjoy!
